Which payment gateway charges my subscription renewals?

You choose it. Open Plugins, then Subscriptions, go to the Settings tab and pick one in Default payment gateway for subscriptions. Only gateways already enabled under Settings → Store Settings → Payment Gateway appear in the list. On the same tab you can turn on Send renewal reminder emails and set Reminder days before, and choose whether customers can pause or cancel. Click Save settings when done.
