How do I hide one shipping option in a zone without deleting it?
I offer Express in my city zone, but my courier is not doing express this month.

Go to Plugins → Shipping Zone and click Edit on the zone. Find the method under Shipping methods and untick Enabled at the bottom of its box. Then click Save zone.
Customers in that zone stop seeing it at checkout, but its label, type and rates are kept. When you want to offer it again, tick Enabled and save.
Make sure at least one method in the zone stays enabled. A zone with no enabled methods offers no zone shipping, and those customers fall back to your Shipping Setup charges.
