How do I put a product on sale without losing its regular price?

Use the sale price field in the product's Pricing section. Your regular price stays as it is, and the sale price is what the customer pays while it is set.

When the sale is over, clear the sale price and the product goes back to the regular price.

For a discount across many products at once, Bulk Price Update or a coupon is quicker than editing each product.
