I want customers to be able to add gift wrapping or a name engraving, each for an extra charge.

Use the Product Add-ons plugin. It adds priced options to a product, such as gift wrap or engraving, and the extra cost is added to the order. Add-ons support conditional logic, so an option can appear only when it makes sense. For example, an engraving text box can show only after the customer ticks "Add engraving".
