Can I add private notes to an order?
I want to note things like "customer asked for delivery after 5 pm" so my staff can see them.

Yes. Open the order and add an internal note. Notes are for you and your staff, not the customer.
The order page also has a timeline of what happened to the order, along with the items, totals, customer, address and payment method.
